The facility is powered by two external water wheels, harnessing the canal’s steady flow to drive an internal system of crankshafts. These mechanisms convert continuous water motion into controlled rotational force, enabling consistent, large-scale production without reliance on manual labour alone.

Attached to each crankshaft are sets of rotating barrels, five per shaft, dedicated respectively to butter processing and ice cream production. The ice cream barrels, constructed from reinforced metal, are fitted with specialised water based enchantments that maintain freezing temperatures throughout the churning process, ensuring both consistency and preservation. The dual production lines operate in parallel, allowing for simultaneous output of staple goods and luxury items, balancing efficiency with quality.

Following early production trials, an engineering upgrade has been integrated into the factory to improve the purity of the water used throughout the confectionery process. Constructed as a dedicated side chamber adjoining the main production floor, the new purification system combines practical engineering with the steady heat of the forge. Canal water first passes through a gravity-fed flume where layers of tightly woven mesh cloth remove larger stones, silt, and other suspended debris. The filtered water is then directed into a sealed distillation chamber, where forge heated vessels gently boil the water. As steam rises, it is captured through a funnelled condenser before collecting within a separate storage reservoir as purified water ready for production. Between two and four interchangeable filtration meshes can be fitted depending on canal conditions, allowing the system to maintain consistent water quality throughout the seasons. This addition ensures that the subtle flavours of the confectionery are no longer influenced by impurities from the surrounding waterways, preserving the intended taste of every batch.

The facility has developed a distinct range of signature flavours, each rooted in identity and regional character. Among them are The Hammered Hound, a rich blend of whisky and caramel; Rum Locker, infused with rum, mango, and pineapple; and The Wonder, a vibrant red berry medley. In addition to these, Jaxs’ 99’s supports the work of a specialist healers’ guild known as GOSH, producing restorative ice creams that blend nourishment with subtle medicinal properties. These include unconventional creations such as spinach and fruit salad infusions, crafted with intent beyond flavour alone.

Extensive hygiene and sanitation upgrades define the internal environment of the facility. Surfaces are finished in white tile to ensure visibility of cleanliness and ease of maintenance, while dedicated cleaning rooms, supply stations, and maintenance areas support strict hygiene practices. These measures, combined with the newly installed purification system, underpin the facility’s ability to produce consumable goods at scale without compromising quality, safety, or consistency.

The upper levels of the building function as controlled storage areas, preserving finished goods prior to distribution or trade. This vertical separation between production and storage enhances workflow efficiency and environmental management, allowing raw ingredients, finished products, and purified water reserves to remain carefully organised throughout the facility.

Jaxs’ 99’s has become more than a production facility, it is a contributor to morale across Hammerstadt and beyond. By delivering accessible luxury in the form of high quality butter and ice cream, it introduces moments of comfort into an otherwise industrial landscape, with growing potential for trade extending its reach further afield.
